Ingredients:
· meat of 4 young coconuts
· 15-20 dates, chopped & pitted
· 2 tablespoon apple, cut, peeled
Directions:
Blend coconut meat, dates, and apple in food processor.
Serve in small crystal bowl for The Temple of Doom.
Indian Pudding
Serves 8
Prep time: 10 minutes
Total Time: 3 hours 10 minutes
Ingredients:
· 4 cups half-and-half
· 3/4 cup unsulfured molasses
· 4 tablespoons unsalted butter
· 1 teaspoon ground ginger
· 1 teaspoon ground cinnamon
· 1 teaspoon salt
· 1/2 cup yellow [or white] cornmeal
· vanilla ice cream or lightly sweetened whipped cream, for serving [optional]
Directions:1. Preheat oven to 275. In a medium saucepan, combine half-and-half molasses, butter, ginger, cinnamon, and salt. Bring
to a boil; remove from heat, and whisk in cornmeal.
2. Pour mixture into an 8-inch square baking dish, and bake until pudding is firm but still jiggles slightly in the center when gently shaken, 2 to 2 1/2 hours. Let cool 30 to 60 minutes; serve warm or at room temperature, with vanilla ice cream or whipped cream, if desired.Crystal Skull Guacamole - Make ahead provisions
Makes 3 cups
Ingredients:
· 2 plum tomatoes, diced
· 1/2 medium red onion, finely chopped
· 2 tablespoons coarsely chopped fresh cilantro
· 1 tablespoon fresh lime juice
· 1 garlic clove, crushed through a press
· 1/2 teaspoon coarse salt
· 1/4 teaspoon ground cumin
· 1/8 teaspoon hot pepper sauce
· 2 large, ripe Hass avacados, pitted and peeled
Directions:1. Combine tomatoes, red onion, cilantro, lime juice, garlic, salt, cumin, and pepper sauce in a medium bowl.
2. With a fork or potato masher, coarsely mash avacados in a large bowl. Stir in tomatoe mixture.
3. Directly cover surface of guacamole with Glad-Wrap and refrigerate up to 4 hours. Tip: to keep guacamole from browning, place one of the avacado pits in the bowl of the prepared mixture before covering with clear wrap. The pit's natural enzymes help maintain the natural colour while the wrap allows the flavours to blend vibrantly. Serve guacamole in a round crystal dish with fresh corn strips, blue chips, or tortilla corn chips on the side.
