Brunswick Stew

4-pound fricassee chicken
1 ½ pounds shin of beef
1 pound pork spareribs
2 quarts cold water
2 tablespoons sea salt
1 ½ teaspoons whole black pepper
4 2-inch pods red pepper
1 cup diced potatoes
1 cup snap beans
1 cup peas
1 ½ cup chopped onions
2 cups sliced okra
2 cups lima beans
2 cups corn, cut off the cob
2 ½ quarts fresh tomatoes
1 tsp ground black pepper
1 ½ cup butter

Disjoint chicken and place in 7-quart kettle with beef, pork, water, sea salt, whole black pepper, and red pepper. Cover and cook slowly 2 hours or until meat falls off the bones. Remove bones and discard. Cut meat and chicken into cubes and return to stock Add potatoes, snap beans, peas, onion, okra, lima beans, corn, tomatoes, and ground black pepper. Cover. Cook gently one or more hours stirring frequently to prevent scorching. If desired add butter or margarine.
Yield: 1 ½ gallons

Hazelnut Cake or Hazelnut Tart
Hazelnut Cake

1 cup butter
2 cups raw sugar
4 eggs
3 cups sifted unbleached flour
1 tbsp. baking powder
1 cups milk
1 tsp. pure vanilla extract
1 cup ground hazelnuts or black walnuts
Confectioners’ sugar

Grease 9-inch tube pan; line bottom with aluminum foil. Cream butter; gradually add sugar, beating until light and fluffy. Add eggs one at a time, beating well after each addition. Sift together dry ingredients; fold in alternately with milk and vanilla. Fold in nuts. Spoon into tube pan. Bake in preheated 350 degrees F. oven 1 ¼ hours or until done. Cool in pan. Remove from pan. Sift confectioners’ sugar over top. Serves 12 to 16.

Scallops New Orleans Style
Grasshopper Pie

1 pound scallops, fresh
2 onions, sliced
2 tablespoons butter
½ cup instant nonfat dry milk
2 tablespoons rice flour
2 cups tomatoes, peeled
½ tsp sea salt
¼ tsp freshly ground pepper

Simmer scallops in 2 cups water until tender. Drain. Cook onion in butter until soft. Mix non-fat dry milk, flour, tomatoes, sea salt, and freshly ground pepper. Add to onions and cook, stirring constantly until thickened. Add drained scallops. Serve with toasted rounds.
Yield: 8 servings

Grasshopper Pie


1 envelope unflavored gelatin
½ cup sugar, divided
1/8 teaspoon sea salt
½ cup cold water
3 eggs, separated
¼ cup green crème de menthe
¼ cup white crème de cacao

In top of double boiler, mix together gelatin, ¼ cup sugar, and sea salt. Stir in water. Blend in egg yolks, one at a time. Place over boiling water, stirring constantly, until gelatin is dissolved and mixture thickens slightly (about 4 – 5 minutes). Remove from heat and stir in crème de menthe and crème de cacao. Chill, stirring occasionally, until mixture is consistency of unbeaten egg white. Beat egg whites until stiff, but not dry. Gradually add remaining ¼ cup sugar and beat until very stiff. Fold in gelatin mixture. Fold in whipped cream. Turn into Chocolate Crumb Shell. Chill until firm. If desired, garnish with additional whipped cream and chocolate crumb or pistachio nuts.

Chocolate Crumb Shell

1 ¼ cup chocolate wafer crumbs
¼ cup sugar
1/3 cup butter

Preheat oven to 400 F. Mix together chocolate crumbs, sugar, and butter. Press against bottom and sides of 9-inch pie plate. Bake in 400 F. oven 5 minutes. Chill.

Bombay Madness


4 fillet steaks, 1 inch thick
White pepper, cracked
11 stalk lemon grass, chopped (or 1 bunch lemon thyme or chopped peel of 2 lemons)
1-inch piece fresh ginger, thickly sliced
20 black peppercorns, crushed

Remove steaks from refrigerator at least 1 hour before cooking. (Steaks should be at room temperature.) Press a generous amount of white pepper into surfaces of steak.

Cover. To prepare steamer, place lemon grass and water in steamer with ginger and peppercorns. Boil 1-2 minutes to release oils and flavors of aromatics. When ready to cook meat, salt steaks and steam over vigorously boiling liquid for 3 minutes only.

Curry Butter

½ pound unsalted butter
2 thin slices fresh ginger, chopped
1 large shallot, chopped
1 small clove garlic, chopped
1 small green hot chili, seeded and chopped
1 tablespoon curry powder (if Garam Masala is not available, use 2 tablespoons curry powder)
1 tablespoon lemon juice
Pinch ground turmeric
Sea salt and pepper to taste

Blend all ingredients in food processor until smooth. Reserve.

Accompaniments/Garnish: Pickled onions, Cucumbers in yogurt and crème fraiche, Fresh mint chutney, Papaya slices, Banana slices Other garnish

For the pickled onions, use sweet onions if possible. Peel and trim top and bottom. Slice thinly, place in stainless bowl, salt heavily, and toss. Leave for 1 hour and drain thoroughly. Bring 1 cup vinegar to boil and pour over drained onions. Reserve. For the cucumbers in yogurt and crème fraiche, slice 2 small cucumbers thinly, sea salt, and allow to set one hour. Drain thoroughly, pressing gently to expel water. Mix ¼ cup plain yogurt and ¼ cup crème fraiche. Add dash chili powder and mix with cucumbers. Chill. For the mint chutney, see any Indian cookbook. Other garnish should balance Western color and freshness with the Indian flavors. Possibilities include blanched carrots, green beans, zucchini, and okra.

Assembly: to serve, arrange accompaniments around outside of heated plate, place filet in center, top with dab of curry butter, and serve immediately.

Lemon Ice Cream

Makes enough ice cream for 12 sandwiches
This recipe was created to accompany Gingersnap and Lemon Ice Cream Sandwiches.

• 1 tablespoon freshly grated lemon zest
• 1/2 cup fresh lemon juice
• 1 cup sugar
• 3 large eggs
• 2 cups half-and-half
• 1/2 teaspoon vanilla

In a saucepan whisk together the zest, the lemon juice, the sugar, and the eggs, whisk in 1 cup of the half-and-half and the vanilla, and cook the mixture over moderately high heat, whisking constantly, until it just comes to a simmer.
Strain the custard through a fine sieve into a bowl, pressing hard on the zest, and chill it, covered with plastic wrap, until it is cold. Whisk in the remaining 1 cup half-and-half and freeze the mixture in an ice-cream freezer according to the manufacturer's instructions.
Makes about 1 quart.

Pasta with Cream Truffle Sauce and Fresh Mushrooms


Favorite Pasta
2 tablespoons butter
2 tablespoons button mushrooms, chopped
2 tablespoons shallot puree
1 tablespoon peppercorns, crushed
2 bay leaves
1 cup white wine
2 cups chicken stock
1 cup heavy cream
½ cup Madeira wine
4 tablespoons truffles, finely chopped
Sea salt and pepper
1 tablespoon of each: sliced cepes, sliced shitake and sliced chanterelle mushrooms

Melt butter in sauté pan. Add mushrooms, shallot puree, peppercorns, and bay leaves. Deglaze with white wine. Reduce over high heat about 2 minutes. Add chicken stock and continue cooking over medium heat 2-3 minutes. Add cream, bring to a boil, then reduce by one-third and make it a smooth consistency. Adjust seasoning. In another sauté pan, add Madeira wine to 3 tablespoons truffles. Reduce over high heat 2-3 minutes. Strain cream sauce into truffles and wine, then reduce to a smooth consistency.

Cook pasta in plain boiling water, then drain. In sauté pan, heat 2 tablespoons olive oil, 1 tablespoon chopped truffles, sea salt, and pepper. Add pasta to sauté pan. Add a little cream truffle sauce and heat. In another sauté pan, sauté 1 tablespoon sliced cepes, 1 tablespoon sliced shitake and 1 tablespoon sliced chanterelle mushrooms in 1 tablespoon olive oil. Strain. To serve, ladle sauce onto serving plate, swirl pasta in center and garnish with sautéed mushrooms. Top with chopped truffles.

Cranberry Wine Ice


1 pound fresh or frozen cranberries
2 cups honey
2 cups orange juice
1 cup sauterne or other white wine
1 egg

Mix cranberries, honey , and orange juice in a saucepan. Cook at a slow boil for 5 minutes or until cranberries are very tender and mushy. It will take longer if the cranberries are frozen. Press cranberries through a sieve or food mill to make a puree. Stir in sauterne or other wine. Pour mixture into a freezer container. Freeze until half frozen. Scrape mixture into a bowl. Add unbeaten egg white and beat until smooth and fluffy. Pour back into freezer container and cover closely. Freeze until hard. Keeps well for several weeks in freezer if kept closely covered.

Ingredients for Scotch Shortbread
For the shortbread:

1 cup butter
2 tsp Angostura aromatic bitters
1/3 cup sugar
3 ½ cups unbleached flour

Have butter at room temperature. Mash butter. Angostura, and sugar until well blended and fluffy. Add flour; work into dough using hands. Cut dough into 4 pieces. Crease a cookie sheet. Place dough on cookie sheet. Press out evenly into four 7-inch rounds. Cut each round into 6 wedges with a knife. Bake in preheated 350 F. oven 20-25 minutes. Cookies will not brown. Cool shortbread on cookie sheets. Cut wedges again with a knife while cookies are still warm.

For the frosting:

2 cups sifted confectioners’ sugar
Grated rind of 1 orange
3 tbsps. Lemon juice
1 tsp. Angostura aromatic bitters
1 tbsp. soft butter

Combine frosting ingredients; heat until smooth. Spread frosting on shortbread. Let dry at room temperature and then separate into wedges. Store in airtight container in a cool dry place. Makes 24 triangles.

Cassolette of Langoustine

12 langoustine
4 scallops
2 tablespoons oilive oil
2 tablespoons butter
2 tablespoons shallots, finely chopped
2 teaspoons lemon juice
¼ cup white vermouth
1 cup heavy cream
2 teaspoons fish veloute (fish stock, roux, salt, and pepper)
1 medium carrot, julienned
1 leek, julienned
1 celery stalk, julienned
Salt and pepper
Fresh parsley, chopped

Shell langoustine. Soak scallops in cold running water to clean. In sauté pan, heat oil and butter, then sauté shallots. Add langoustine, salt, pepper, and scallops. Saute quickly, underdone; remove langoustine and scallops with slotted spoon and drain. Deglaze with lemon juice and vermouth. Add cream, fish, veloute, salt and pepper, and cook until sauce is thick and smooth, whisking occasionally. Add julienned vegetables, langoustine, and scallops and cook very briefly. On individual serving plates, dish out three langoustine and one scallop. Pour sauce and julienned vegetables over top and garnish with chopped parsley.

Celestial Chocolate Mousse

2 envelopes (2 tbls) unflavored gelatin
1 cup sugar, divided
¼ tsp. sea salt
4 eggs, separated
2 cups milk
2 pkgs. (6 oz. each) semisweet real chocolate pieces
2 tsps. Pure vanilla extract
2 cups heavy cream, whipped

Combine gelatin, ½ cup sugar, and salt in 3-quart saucepan. Beat together egg yolks and milk; stir into gelatin mixture. Add chocolate pieces. Cook over medium heat, stirring constantly, until gelatin is dissolved and chocolate is melted. Remove from heat; stir in vanilla extract. Chill, stirring occasionally, until mixture mounds when dropped from a spoon. Beat egg whites until stiff, but not dry. Gradually add remaining sugar; beat until very stiff. Fold in chocolate mixture. Fold in whipped cream. Turn into 2-quart decorative mold. Chill until firm. Unmold. If desired, garnish with whipped cream.
Serves 16.

This menu would be Incomplete without a note taken from the pages of renown Stein-Toklas remedies, illustrated for the family in the Peter Sellers movie.

Time had this to say about the 1954 Cookbook:

“The late Poetess Gertrude (Tender Buttons) Stein and her constant companion and autobiographee, Alice B. Toklas, used to have gay old times together in the kitchen. Some of the unique delicacies that were whipped up will soon be cataloged… in a wildly epicurean tome… Perhaps the most gone concoction (and also possibly a clue to some of Gertrude’s less earthly lines) was her hashish fudge.”

The original recipe, although rather vague as to directions, may conceivably be summarized as follows:


1 tsp. black peppercorns
1 whole nutmeg
4 sticks cinnamon
1 tsp. coriander
1 handful stone dates
1 handful dried figs
1 handful shelled almonds
1 handful peanuts
A bunch of ingredient x (“picked and dried as soon as it has gone to seed and while the plant is still green.”)
1 cup sugar
1 large pat butter


Grind the pepper, nutmeg, cinnamon and coriander in a mortar. Chop and mix the dates, figs, almonds, and peanuts. Grind ingredient x and mix it with the spices; dust this mixture over the fruits and nuts. Mix the sugar with the butter and knead this together with the fruits, spices, nuts, and ingredient x. Eat with care – two pieces are quite sufficient.

Other terms for an Alice B. Toklas brownie include, “space cake,” “pot pie,” “hash brownie,” or “magic brownie.” The latter term has been used as a source for just about any other food item that contains ingredient x – refer to “magic tea,” “magic cake,” etc.

4" Wilton cookie cutters will yield 32 cookies


1 cup butter, softened
1 package (3 ounces) cream cheese, softened
1 cup sugar
1/4 teaspoon sea salt
1 egg
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour


3 cups confectioners' sugar
1/3 cup butter, softened
1-1/2 teaspoons vanilla extract
2 to 3 tablespoons milk
Food coloring, optional
Assorted sprinkles or candies


1. In a large bowl, cream butter, cream cheese, sugar and salt until light and fluffy. Beat in egg and vanilla. Gradually beat in flour. Refrigerate, covered, 1-2 hours or until firm enough to roll.
2. Preheat oven to 375°. On a lightly floured surface, roll dough to 1/8-in. thickness. Cut with floured cookie cutters. Place 1 in. apart on ungreased baking sheets.
3. Bake 7-8 minutes or until edges are lightly browned. Cool on pans 1 minute. Remove to wire racks to cool completely.
4. In a small bowl, beat confectioners' sugar, butter, vanilla and enough milk to reach desired consistency. If desired, add food coloring. Decorate cookies with frosting and sprinkles.Yield: about 7 dozen.
