Paul & Linda's Chili Non Carne
The best chili you'll get this side of Tijuana! This is one of our favorite vegetarian recipes.
Serve with rice, mashed potatoes, or an avocado salad.
2 teaspoons vegetable oil
1 medium onion, chopped
1 1/2 level teaspoons chili powder (or more, according to taste)
2 4 1/2 ounce packets TVP Chunks or 4 vegetable burgers, crumbled
1 1/2 cups vegetable stock or water (3/4 cup when using vegetable burgers)
1 16-ounce can tomatoes, chopped, liquid reserved
1 16-ounce can red kidney beans, do not drain
2 Mexican green chilies in brine, drained, chopped (optional)
salt and freshly ground pepper, to taste
Heat oil in large saucepan. Add onion, sauté until golden brown. Add chili powder, and TVP, sauté 5 minutes. Add vegetable stock, tomatoes, kidney beans, green chilies and reserved liquid from tomatoes.
Cover, simmer 20 minutes. 6 Servings

EASY BERRY & WINE SOUP
Ingredients
1 c Cranberry juice
1 c Dry red wine
1 Cinnamon stick, about 3" long
1 pk (425g) frozen raspberries in
Light syrup
1 tb Freshly squeezed lemon juice
1 tb (or 2T) granulated sugar, optional
1/2 c Sour cream or whipping cream, optional
Boil cranberry juice with wine and cinnamon stick over high heat until reduced to 1 cup, about 9 minutes.
Meanwhile, puree berries in a blender. Strain and discard seeds. Remove cinnamon stick from reduced wine mixture. Stir in berry mixture. Pour into a bowl.
Taste and add lemon juice and 1 to 2 tablespoons sugar, as needed. (Soup will taste less sweet when chilled.) Refrigerate at least until cold, about 3 hours or up to 2 days. Serve chilled with a swirl of cream in centre.

Strawberry Tart Recipe
Tarte aux Fraises
Ingredients
• One 9ins cooked pastry shell or six small shells (using the sweet shortcrust pastry)
• 3/4 pound(340g) cream cheese
• Grated rind of 1 orange
• 2 tablespoons orange juice
• 4 tablespoons powdered sugar
• 1 pound(455g) ripe strawberries
Method
• Beat together the cheese, orange rind, juice and powdered sugar
• Fill the shell or shells with the cheese filling about 3/4 full
• Halve the strawberries and arrange them on top of the filling
• Dust with powdered sugar (optional)
Alternate Filling
Ingredients
6 pts. Fresh strawberries, cleaned, hulled, and quartered
1/2 cup granulated sugar
6 tablespoons unsalted butter
1/2 teaspoon cinnamon
4 tablespoons all-purpose flour
1/4 cup sliced almonds
1/4 cup granola
1 teaspoon vanilla
Confectioner’s sugar for dusting
Make the Filling
Heap strawberries into tart shells. In a mixing bowl, blend granulated sugar and butter until light and airy. Add cinnamon, flour, almonds, granola, and vanilla and mix until well combined. Top each tart with the mixture and bake 6-8 minutes at 400 F, or until golden brown. Remove tarts from oven and sprinkle with powdered sugar. To serve, place each tart on a dessert plate. If desired, serve with a scoop of sorbet or whipped cream garnished with mint springs on the side.

Brother’s Fried Eggplant Strips
INGREDIENTS
2 eggs, beaten
1/2 cup milk
2teaspoons Tabasco pepper sauce
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 eggplant, cut into 3-inch strips
1/2 cup flour
Bread crumbs, the spicy seasoned type are best
Vegetable oil for frying
DIRECTIONS
Mix eggs, milk, Tabasco sauce, cayenne and black peppers. Dust eggplant lightly with flour on all sides. Dip into egg mixture. Cover completely with bread crumbs. Heat large skillet filled ½ full with oil. Fry breaded eggplant slowly until golden brown.
4 Servings.
PRALINES
Straight from the New Orleans School of Cooking.
Ingredients
1 1/2 c. sugar
3/4 c. packed light brown sugar
1/2 c. milk
6 tbsp butter (MUST be butter!)
1 1/2 c. pecans
1 tsp vanilla
Directions
Mix all in a large heavy bottom pot. Slowly bring to 238-240'F (soft ball), stirring constantly. Remove from heat.
Stir until it thickens a bit and becomes creamy. Drop on parchment paper in spoonfuls. You need to work *very* quickly!
Let cool! They'll still be there when they are cool - no use burning yourself.
*For coconut, replace milk w/ coconut milk and pecans with shredded coconut.

Ingredients
4 boneless shell steaks, 6 to 8 oz. each, slightly flattened, or 4 filets mignons of same weight
sea salt, pepper
coconut cooking oil
3 Tbs. (1 1/2 oz.) Scotch whiskey
1/2 cup dry red wine
1/2 teaspoon anchovy paste
1 teaspoon Worcestershire sauce
3 Tbs. butter
Steaks at room temperature. Brush a wide saucepan or skillet with just enough oil to coat very lightly.Heat over moderate gas flame. Pan must be very hot. Sprinkle steaks with sea salt and pepper. Saute until medium brown on both sides. Add Scotch whiskey and set ablaze. When flames subside remove steaks from pan to platter. Add wine, anchovy paste and Worcestershire sauce to pan. Mix well. Scrape pan to loosen drippings. heat wine until it is reduced approximately in half. Add butter. As soon as butter melts, pour gravy over steaks.

Lemon-Apricot Sandwiches
INDREDIENTS
Makes 20
· 1/2 cup almond flour
· 1/2 cup all-purpose flour
· 1/4 cup cornstarch
· 1/2 teaspoon salt
· 1/2 cup (1 stick) unsalted butter, softened
· 1/4 cup confectioners' sugar, plus more for dusting
· 2 tablespoons granulated sugar
· Finely grated zest of 2 lemons, plus 2 tablespoons fresh lemon juice
· 1/2 cup apricot jam
DIRECTIONS
1. Preheat oven to 350 degrees. Whisk flours, cornstarch, and salt in a medium bowl.
2. Put butter, sugars, lemon zest, and 1 tablespoon lemon juice into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until fluffy, about 3 minutes. Reduce speed to low. Add flour mixture in 3 batches, mixing well after each addition. Cover dough with plastic wrap; refrigerate 30 minutes.
3. Place cold dough between 2 pieces of parchment paper, and roll out to 1/8 inch thick. Transfer dough on parchment to a baking sheet; freeze 10 minutes.
4. Using a fluted 1 7/8-inch round cutter, cut out dough; transfer to parchment-lined baking sheets. Reroll scraps, and cut out [you should have 40 rounds]. Bake until pale golden, 10 to 11 minutes. Let cool slightly on sheets on wire racks. Transfer cookies to racks to cool completely.
5. Using a rubber spatula, press the jam through a fine sieve into a small bowl. Stir in remaining tablespoon lemon juice. Spread 1 teaspoon jam mixture on flat side of half of the cookies, and sandwich with the remaining cookies. Dust with confectioners’ sugar.
Helpful hint:
You can substitute other varieties of jam for the apricot. Unfilled cookies can be stored in an airtight container up to three days; enjoy filled ones the day you assemble them.

Moroccan Potato Casserole
Preheat oven to 350 degrees
6 cloves garlic
3 tbsps red wine vinegar
1 pinch salt - to taste
2 tbsps olive oil
2 tsps paprika 1 1/2 lbs red potatoes - slived 1/2 " thick
1/2 tsp ground cumin
3 lg red and green bell peppers - cut in 1" squares
1/4 tsp cayenne
4 stalks celery - cut in 2 " pieces
3/4 c fresh cilantro - chopped
pinch salt - to taste
3/4 c fresh parsley - chopped
1 lb tomatoes - cut in eights
1 ea lemons - juiced
1 tbsp olive oil
Directions
Sauce: In a food processor, combine garlic with 1/2 tsp salt, paprika, cumin and cayenne - porcess until it forms a paste. Add herbs and pulse till blended. Add lemon juice, vinegar and olive oil and blend. Season with salt. In large bowl, combine potatoes, bell peppers and celery. Season with salt and toss with sauce. Transfer to a large, shallow baking dish and scatter tomatoes among potato mixture. Drizzle oil over top, cover with foil and bake for 35 minutes.
Remove foil and bake until vegetables are tender, 20 - 30 minutes. Serve warm. Thank you "luckypig@infi.net"

Chill cocktail glass. Prepare as follows:
In pre-chilled cocktail shaker combine
1 3/4 oz Asbach Uralt
1 1/4 oz Tarkhuna
1/2 oz honey
4 drops cherry flavored brandy
Stir with short stir rod or spoon with ice.
Strain into chilled cocktail glass.
Lightly balance piece of peach on glass rim.

To Serve Wines
Never drink any hard liquors, such as whisky, brandy, gin, or cocktails, with oysters or clams, as it is liable to upset you for the rest of the evening.
With hor d'ourves serve vermouth, sherry, marsala or madeira wine.
With soup and fish serve white wines, such as Rhein wine, sauterne or white burgundy.
With entrees serve clarets or other red wines, such as Swiss, Bordeaux,
Hungarian or Italian wines.
Burgandy may also be served at any of the later courses.
With roasts serve champagne or any of the sparkling wines.
With coffee serve kirch, French brandy or fine champagne.
After coffee serve a liqueur. Never serve more than one glass of any liqueur.

Traditional California Favorite
Roast large bell peppers until the skin turns black. Wash in cold water and rub off the blackened skin. Cut around the stem and remove the seed and coarse veins. Take some dry Monterey cheese, grated fine, and with this fill the peppers, closing the end with a wooden toothpick.
Prepare a batter made as follows: Beat the yolks and whites of six eggs separately, then mix, and stir in a little flour to make a thin batter. Have a pan of boiling lard ready and after dipping the stuffed pepper into the batter dip it into the lard. Remove quickly and dip again in the batter and then again in the lard where it is to remain until fried a light, golden brown, keeping the peppers entirely covered with the boiling lard.
Take the seeds of the peppers, one small white onion and two tomatoes, and grind all together into a pulp, add a little salt and let cook ten minutes. When the chilies are fried turn the remainder of the batter into the tomatoes and boil twenty minutes, then turn this sauce over the peppers.
This is a most delicious dish and can be varied by using finely ground meat to stuff the peppers instead of the cheese.

Green Tea Ice Cream
Makes about 1 quart
Ingredients
2 cups heavy cream
1 cup whole milk
1/4 teaspoon salt
6 large eggs
2/3 cup sugar
2 tablespoons matcha [powdered Japanese green tea]
special equipment: an ice cream maker
Bring cream, milk, and salt to a boil in a 3-to4-quart heavy saucepan and remove from heat.
Whisk together eggs, sugar, and matcha in a bowl [tea will not be completely dissolved), then add 1 cup hot cream mixture in a slow stream, whisking vigorously. Whisk custard into remaining cream mixture in saucepan and cook over moderately low heat, stirring constantly with a wooden spoon, until thick enough to coat back of spoon and registers 170 F on an instant-read thermometer [do not let boil).
Immediately pour custard through a fine sieve into a metal bowl, then cool to room temperature, stirring occasionally. Chill, covered, until cold, at least 1 hour.
Freeze in ice cream maker, then transfer to an airtight container and put in freezer to harden.
Cooks’ note: Ice cream keeps 1 week.

Robert Redford's Terrific Green Olive Salad
9 ounces frozen artichoke hearts
1 cup boiling water
1 head romaine lettuce, torn up
1 cup mung bean sprouts
Dressing or go with one of Newman's Own:
1/2 cup vegetable oil
1/4 cup wine vinegar or 3 tablespoons fresh lemon juice
4 teaspoons fresh dill, chopped
1 tablespoon chopped parsley
2 scant teaspoons granulated sugar
1 teaspoon Dijon mustard
1 teaspoon salt
1/4 teaspoon fresh ground pepper
1 cup pimento-stuffed olives
Plunge artichoke hearts in boiling water; remove pan from heat and let stand only 2 minutes. Drain and chill.
Combine artichoke hearts, romaine, bean sprouts and olives.
In small jar with tight-fitting lid, combine vegetable oil, wine vinegar, dill, parsley, sugar, salt, mustard and pepper. Shake well to combine.
Just before serving, pour over salad and toss until well coated.
Serve with barbecued steak or grilled rainbow trout.
Serves 6 to 8.

U2 - Leprechaun Pie
Ingredients: Makes one 9-inch pie
6-oz. Can Sweetened Condensed Milk
8-oz. Can frozen Limeade
8-oz. Tub Whipped Topping
3-4 drops Green Food Coloring, or more as desired
1 prepared Graham Cracker Crust or baked pie shell
Lime Slices [for optional garnish]
Directions
Thoroughly blend together the condensed milk and the limeade frozen concentrate.
Fold in the whipped topping, adding green food coloring a few drops at a time until desired hue is attained.
Pour the filling into the prepared grapham cracker pie shell. Garnish pie with dollops of whipped topping and lime slices, too, if desired.
Refrigerate for about 2 hours prior to serving. Slice to serve.

2 cups milk (if fresh milk is not available, an unsweetened canned milk or milk powder may be used with excellent results) 2 whole eggs or 4 egg-yolks * 4 tablespoons sugar 1/8 teaspoon salt * 1/2 teaspoon vanilla
Directions: Scald the milk in the top of the double boiler. Beat together slightly the eggs, sugar and salt. Add the hot milk to the egg mixture, mix thoroughly and return to the top of the double boiler. Cook over hot water, stirring constantly until the egg coats the spoon. Add vanilla.
